Part used :
Perennial, woody shrub with oblong or linear leaves and blue flowers.

Savory is a member of the Labiatae family (Laminaceae). The plant is a evergreen shrub native in the valleys and mountains of southern Europe. It is a spicy plant which grows about 30 cm high (13in). In a vegetable garden, Savory is often planted close to the crops (e.g. beans) to disperse lice.

When eaten with bloating foods it alleviates flatulence. The active ingredients of the plant include tannin, proteins, vitamin A, calcium, potassium and essential oils like borneol (a terpene), carvacrol (cymophenol, a phenol), carnol, cimene, estragolole, camphre, terpinene (terpinolene, a terpene) and timolol (a receptor-antagonist used to treat glaucoma).

History: Giovanni Targioni Tozzetti, a 18th century, italian naturalist, describes the properties of Savory as follows:“The herb is of aromatic flavor and has both tonifying and cleansing properties. Farmers use it to spice their meals, their wine and they hang it in their barns.“
