Alfalfa (lucerne) is an evergreen plant of the pulse/Fabaceae family (sub-family peas/Faboidae). The plant prefers warm regions and shows blue/purple blossoms. History: Originally from the mid and far east, it is grown commercially the world over for feed for lifestock. Alfalfa was an important horse feed in ancient Persia. Its properties for binding nitrogen - particularly appreciated in organic farming - have helped to improve agricultural output the world over.

Dried Alfalfa contains a multitide of minerals, trace elements, chlorophyll and secondary plant contents and is hence useful in re-mineralizing and re-vitalizing the body. Due to its content of saponines, Alfalfa is used in treatment of high cholesterol, fatigue, muscle cramps, osteoporosis and bad breath. Its high content of trace minerals is beneficial for metabolising enzymes. The main active ingredients include: vitamins A, B1, B6, B12, C, E, K1, biotine, panthotenic acid, folic acid, niacine, amino acids, sugars, trace minerals (Ca, P, K, Mn, Fe, Cu), flavanoids and derivatives of tonka bean camphor. Studies conducted in the US show beneficial properties in the treatment of rheumatic disorders, i.e. pain reduction, improvement of metabolism and reduction of swellings. Alfalfa has blood coagulation properties which is used in the treatment of hemorrhoids. Finally, Alfalfa seedlings are beneficial in the treatment of acne, due to their high content of vitamin A and carotine, and their high content of vitamin C makes them an important natural source (1 cup of Alfalfa = 6 cups of oranges). Due to their nutty flavour, the sprouts are popular for use in salads and as a spread.

Note: The concentration of the toxin Canavanine which is contained in the sprouts is too high for consumption before the 7th day of sprouting.
